Preparation of WineThe grapes were handpicked and transported to the cellar and processed. Light pressing of the grapes ensured for optimal colour, flavour and phenol extraction. The juice was left to settle for 48 hour and racked to stainless steel tanks. A cold and spontaneous/wild fermentation ensured the preservation of wine’s aromatics. Tirage bottle fermentation follow. The wine was aged for 16 months on lees before disgorgement.
