Winemaking
The grapes were hand-picked at 25˚B and carefully crushed and de-stemmed before being pumped to stainless steel fermentors. The wine was pumped over three to four times a day during fermentation for gentle extraction of colour and flavour. This wine underwent malolactic fermentation in tank before being moved to French oak for 9 months of maturation.
Winemaker’s comments
This wine shows red berries on the nose with liquorice and dark chocolate notes that follow through to a spicy, yet pleasantly soft finish.
